擺盤的粉紫花朵是什么?
這種粉紫色花名為秋石斛,是石斛蘭的一種,為蘭科石斛屬多年生草本植物。因為秋石斛花期主要是秋季,通常集中在8~11月份開放,所以才有了這個名字。秋石斛是典型的熱帶花朵,又叫“熱帶洋蘭”,原產(chǎn)于東南亞和西太平洋島嶼,目前泰國、新加坡、美國夏威夷等地都是秋石斛的主產(chǎn)地。
This flower is called the Dendrobium phalaenopsis, specifically a type of autumn-blooming Dendrobium. It belongs to the orchid family (Orchidaceae), genus Dendrobium, and is a perennial herb.
Because its primary blooming season is autumn, typically concentrated from August to November, it earned the name "autumn Dendrobium".

絢麗多姿的秋石斛,其實是雜交出來的。它以原本產(chǎn)于熱帶地區(qū)的種類(新幾內(nèi)亞的蝴蝶石斛)為親本,經(jīng)多代雜交培育而成。因此人們也稱秋石斛為“蝴蝶石斛”。

為何能成為“擺盤神器”?
蝴蝶花形的秋石斛能從眾多的花卉中脫穎而出,成為“菜品裝飾王”,和其自身過硬的實力分不開。
The Dendrobium phalaenopsis stands out among numerous flowers to become the "king of dish garnishes" thanks to its inherent strengths.
首先是顏值高。蝴蝶花形秋石斛因富含花青素苷,所以以粉紫色為主,外加白色點綴,顏色喜慶又清新,再加上花瓣向外卷曲打開,花形優(yōu)雅俏麗,顏值頗高,受到飯店青睞也不奇怪。
Rich in anthocyanins, the Dendrobium phalaenopsis is primarily pink-purple with white accents, giving it a festive yet fresh appearance. Combined with its elegantly curved and opened petals, its graceful and pretty form makes its popularity with restaurants unsurprising.

其次,秋石斛十分“抗造”。一朵花走上餐桌,需要經(jīng)歷采摘、包裝、運輸?shù)鹊炔襟E,幾個回合下來,要是沒點“硬實力”,還沒等擺盤就蔫了。而作為切花的秋石斛花瓣比較厚實,最大的特點是耐儲存和運輸,相比一些需要仔細(xì)呵護(hù)的花來說,秋石斛的優(yōu)勢顯而易見。
For a flower to reach the dining table, it must endure harvesting, packaging, transportation, and more. Without some "toughness", it would wilt before even making it to the plate.
As a cut flower, Dendrobium phalaenopsis petals are relatively thick, and its greatest characteristic is its tolerance for storage and transport. Compared to flowers requiring delicate care, the Dendrobium phalaenopsis's advantage is clear.

從數(shù)量上看,秋石斛花枝比較長,能長到30~60cm,上面開出的花朵也不少,大約能開3~20朵,而且花期長達(dá)1個多月。再加上秋石斛售價不算高,1束(12枝)大約在10元到30元不等,算下來一枝最貴在2.5元左右,假設(shè)一枝上有10多花,一朵也就2毛5,用來擺盤的話性價比還是很高的。
最重要的一點,用于擺盤的花必須安全無毒。蝴蝶花形的秋石斛沒有毒性,也沒有濃郁刺激的味道,裝飾在菜肴上十分安全,且不會影響食物本來的味道。
Most importantly, flowers used for plating must be safe and non-toxic. The Dendrobium phalaenopsis is non-toxic and lacks a strong, pungent scent. Using it to decorate dishes is safe and does not interfere with the food's original flavor.

從另一個角度看,秋石斛寓意美好,它的花語是“慈愛、勇敢、歡迎、祝福、純潔、吉祥、幸福”,用來擺盤裝點菜肴以表達(dá)對食客的歡迎與祝福再合適不過。
而且,在菜肴上擺上一朵秋石斛,還能幫助菜品賣得更好、更貴。
但要提醒一點,雖然秋石斛無毒,但不建議食用,畢竟這種花主要作觀賞用。

大有講究的擺盤
